Bananas for Banana Bread 


I like bread of all sorts. I don’t descriminate, if it’s bread I’ll most likely eat it. But, one of my favorites is banana bread (or cake as a co-worker calls it). I guess like softees, creamies, and soft serve it just depends on where your from, is what you’ll know this beautiful creation as. So growing up my mother would make this for not only my brother and I, but a whole house full of daycare kids. She would make multiple loaves at a time and freeze whatever we wouldn’t eat right off. It freezes well, but also stays pretty well if not frozen.

It’s been probably a couple of years now since I made the horrible mistake of suggesting my mother get an iPhone. She loves to text me morning, noon, and night. “Drive carefully home.” And other very caring things. Love her to pieces, I really do. But I will admit that the phone has come in handy, especially when I want a certain recipe that I know she has a good one of. So I texted her saying I had some very black looking bananas that need to be made into bread and she sends me:


The only other thing she says is “I hope you can read it.”

As you will see above the title of the recipe says “Banana Nut Bread” but there is no nuts listed in the actual recipe. We just disliked nuts as kids in our bread and so when transcribed the nuts were left out. But if nuts are your thing then by all means go and add them, maybe with some chocolate chips as well. Mmmm, banana chocolate chip bread sounds real good.

Banana Nut Bread Recipe:

  • 1 3/4 cup flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup shortening
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup mashed bananas (2 to 3 bananas)

Cream shortening, sugar, and eggs. Beat well. Add bananas. Mix flour, baking powder, soda and salt. Add to mixture. Mix well. Pour into a greased pan. Bake at 350 degrees for 45 minutes to an hour. Check with toothpick after 45 minutes.
