Starting this year off with lots of no bake goodies. It’s been years since I’ve actually had a no bake cookie. My mum used to make them when I was younger, but I vaguely recall hers being slightly less gooey. Something may have gone wrong in the boiling phase of making these cookies. Once cooled though they did solidify a bit more but, still felt like they were melting in my fingers. They tasted fantastic though, probably because if it’s got chocolate and peanut butter, I’m a sucker.
I would like to thank allrecipes.com for the recipe I used. Though mine did not come out looking as dry and solid as theirs did. All that matters is that it was a fantastic tasting recipe.
- 1 3/4 cup white sugar
- 1/2 cup milk
- 1/2 cup butter
- 4 tbsp. cocoa powder
- 1/2 cup (creamy or crunchy) peanut butter
- 3 cups quick cooking oats
- 1 tsp vanilla extract
In a medium size sauce pan combine sugar, milk, butter, and cocoa powder. Bring to a boil and cook for 1 1/2 minutes. Remove from heat and add peanut butter, oats, and vanilla extract. Drop by teaspoons on to a sheet of wax paper. Let cool and enjoy.
