It has been far too long since I last added any recipes to this blog. It’s about time I got back to it and why not with some chocolate chips ta boot. With that being said I recently acquired a close friend who likes his baked goods made with applesauce and so I’ve taken it upon myself to experiment with some recipes that include applesauce to take out some of the oil from the recipes.
I found the following recipe at: Jenerous Plates and it is an excellent recipe that got many rave reviews from consumers (friends). I did however take the salt out of the recipe like I do with most. Thanks!
Chocolate Chip Muffins with Applesauce:
– 1/2 cup milk
– 2 large eggs
– 1 cup unsweetened applesauce
– 1/3 cup sugar
– 1 tsp vanilla extract
– 2 cups all-purpose flour
– 2 tsp baking powder
– 1 tsp baking soda
– 1 tsp ground cinnamon
– 1/3 cup olive oil
– 1 bag of mini semi-sweet chocolate chips (this can be less, but really is there ever too many chocolate chips?)
Preheat oven to 450 degrees. Line two muffins tins (twelve muffins each) with paper cups or grease with spray or butter. Set aside.
In a medium size mixing bowl combine the milk, eggs, applesauce, sugar and vanilla. Mix well. In a smaller bowl combine flour, baking powder, baking soda, and cinnamon. Mix well with a whisk. Add the dry ingredient mixture into the wet ingredient mixture and add oil. Mix til combined well. Then fold chocolate chips into mixture.
After adding chocolate chips distribute batter into muffin tins so that the batter fills about 3/4 of each tin/cup. Once distributed evenly put into oven for 10 minutes at 450 degrees and then lower temperature to 400 degrees and let cook for another 10 minutes or until golden brown on top.
Take out of oven and let cool and then enjoy!
