Coffee Cake Muffin

My first attempt with Coffee Cake of any sort. I don’t know why I’m surprised, but there’s no coffee in it. Lots of cinnamon though. I was also pleasantly surprised by how there is no butter in the actual batter part, but an entire stick in the topping. It was sweet, but not overly sweet.

The recipe I went off of was: It was easy to follow and was a very delicious recipe.


Coffee Cake Muffin Recipe:

– 1 1/2 Cups All-Purpose Flour
– 1/2 Cup Light Brown Sugar
– 2 tsp Baking Powder
– 1 tsp Ground Cinnamon
– 1/4 tsp Baking Soda
– 1/4 tsp Salt
– 3/4 Cup Milk
– 1/3 Cup Vegetable Oil
– 2 Large Eggs

For Crumb Topping:
– 1/3 Cup Granulated Sugar
– 1/3 Cup Light Brown Sugar
– 1 tsp Ground Cinnamon
– 1/4 tsp Salt
– 1/2 Cup (1 stick) Unsalted Butter, Melted
– 1 1/2 Cups All-Purpose Flour

Preheat oven to 375 degrees F. Either line a 12 cup baking pan with paper liners or spray with non-stick spray.

Crumb Topping – In a medium size mixing bowl combine the sugars, cinnamon, and salt. Whisk together well. Then whisk in the melted butter and whisk until well combined. With a rubber spatula mix in the flour and mix until mixture looks just moist. Empty crumb mix on to parchment paper to rest until needed.

Muffin – In a medium size mixing bowl combine the flour, sugar, baking powder, cinnamon, baking soda, and salt. Whisk together and set aside.

In a measuring cup combine the milk, oil and eggs. Whisk together well.

Combine the liquid mixture to the flour mixture and with a rubber spatula mix the flour and liquid ingredients together until smooth.

Using a spoon evenly distribute batter among the muffin tins on baking sheet. Once even take the crumble topping and distribute evenly among the muffins. Patting down gently to help topping connect with batter. Add until mounds exceed the rim of the muffin tin.

Bake 16-18 minutes or until center is baked through. (tooth pick comes out clean)
